Fatty Liver Very Prevalent in North America

Interesting study reported by Jeffrey Bland in the September 2012 of the Functional Medicine Update. Bland reports that of adults, regular weight adults have a 30% prevalence of FL (fatty liver), overweight people have a 75-100% prevalance. Children have a 10% prevalence in lean kids and 30% in obese kids.
This makes me wonder how our starchy carbohydrate intake affects our metabolism and our liver, which has many physiological processes in our body, such as fat digestion, detoxification of internal and external toxins, carbohydrate metabolism, hormone detoxification, bile production and filtering of our blood. People feed ducks a high starch content to make "fois gras" or duck pate that we eat. Other foodstuffs such as a high alcohol consumption and high trans and saturated fat diet are also suspects in fatty liver.
